Banana & Strawberry Pizza

I have not made pizza for quite a while and thought of preparing some pizza dough in advance, for a quick breakfast, snack or dinner.  Then, I noticed my packet of strawberries and bunch of bananas were turning soft and riped.  Why not try some sweet pizza for dessert?

I made a basic pizza dough and divided it into two portions.  I added orange zest to one portion (that's for dessert) and Italian herbs to the other portion.  For the dessert pizza, I needed a filling to spread on the pizza before piling up the fruits.  I thought of using chocolate since chocolate goes well with strawberries and banana.  But since I still have half a bottle of Nutella, after baking my Nutella Cupcakes, I might as well used it instead.

For the Nutella Cream Cheese Fillings
120g cream cheese
2 tbsp Nutella
1 to 2 tbsp orange juice
1 tsp orange zest

1) Beat the cream cheese till light and creamy.
2) Add nutella and orange juice and beat for another minute till smooth consistency.
3) Chill in fridge.

For the Basic Pizza Dough:
(adapted from Kitchen Corner)

200g bread flour (I used 170g bread flour + 30g oat bran)
10g caster sugar
1/2 teaspoon salt
1/2 teaspoon instant yeast
110ml water
1 tbsp olive oil

Portion 1 - add 1 tsp dried herbs
Portion 2 - add 2 tsp orange zest

1) Place all ingredients (except olive oil) in a mixing bowl or mixer.  Mix ingredients to form a dough.  Add in the olive oil and knead till smooth and elastic.

2) Divide the dough into two portions and add (B) to each portion respectively.  Knead till well-mixed.
[As I am not making the savory portion immediately, I place the dough in a lightly oil plastic bag and store it in fridge immediately]

3) For the dough with orange zest, round it up into a ball and place in a lightly-oiled mixing bowl.  Cover with cling wrap and let it proof for an hour or until double in size.

4) Place the dough on a lightly floured surface and knead it gently.  Shape into a ball again and let it rest for 10 minutes.

5) Roll or shape the dough to a round disc (about 8 inch) and place it on a lightly-greased baking pan.

6) Prick the dough with a fork to prevent it from puffing up during baking.

7) Bake in a preheated oven of 220C for around 12 minutes, or until golden brown.

8) Transfer to baking rack to cool for 10 minutes.

To assemble the pizza:

You will need:
  • A handful of strawberries, sliced
  • 2 to 3 bananas, sliced (squeeze a few drops of lemon juice on it to prevent browning)
  • Chocolate sauce - heat up 30ml cream and mix with 20g chocolate chips, stir till smooth
  • Toasted chopped almond

1) Spread the Nutella cream cheese fillings onto pizza.

2) Place strawberries and banana slices onto cream cheese fillings, starting from outer edge and work inwards (leave a 1 cm gap at the edge).

3)  Sprinkle chopped almonds at the edge and drizzle chocolate sauce on the pizza.
