Salt and Pepper Prawns

This is a wonderful dish to whet your appetite.  Deep-fried prawns with the shell on, then tossed in a wok with garlic, pepper, five spice salt and spring onion.  Add some chopped chilies for colour and flavour.  A very quick dish with few steps and ingredients.  The only thing to note is control the heat well, do not attempt to multi-task while cooking this dish and you will have a perfect appetiser to go with your favourite beer.

Salt and Pepper Prawns

8 to 10 medium-sized prawns (wash and pat dry)
1 tbsp cooking wine
1/2 tsp salt
1 level tbsp corn flour
Cooking oil for deep-frying
2 garlic cloves, minced
1/2 tsp five spice salt
Spring onion, chopped

1) Marinate the prawns with cooking wine and salt for 5 minutes.  Lightly coat with corn flour.
2) Heat oil in wok.  When oil gets hot (180C), deep fry the prawns for about 3 to 5 minutes.  Drain the oil.
3) High heat, saute garlic, add the fried prawn, five spice salt & pepper.  Toss quickly for about a minute.
4) Turn off heat, add chopped spring onion and give it a toss.
5) Serve immediately.
