Chocolate Banana & Oat Bran Muffins

Riped banana + leftover Oreo cookies in the jar + small bag of leftover chocolate ganache in the fridge = ???

I always try to clear the existing groceries and food in the fridge/pantry before buying fresh ones to prevent unnecessary food wastage.  Hence, with several leftover items, making banana muffins seems to be the easiest way to clear my pantry.

The special thing about this muffin is the chocolate ganache that I piped into the centre of each muffin before baking.  So a little chocolatey surprise awaits you when you sink your teeth into these soft and moist muffins.

Here's what you need to bake this yummy muffins:

(makes 12 medium-sized muffins)

150g butter
100g caster sugar
2 medium-sized eggs (55gm each) - lightly beaten  

200g cake flour  + 50g oat brans 
1 tsp baking powder
250g mashed bananas 
50g dairy cream 
1 tsp vanilla essence
4 to 5 tbsp chocolate ganache* (or mix 3 tbsp Nutella with 1 tbsp dairy cream)
5 pieces Oreo cookies (crushed into small pieces)
3 pieces Oreo cookies (each break into quarters for toppings) 
2 bananas - sliced (for toppings)

* Two parts of dark chocolate to one part of dairy cream.  Heat cream to a boil, pour into chopped chocolate (at room temp) and stir until all chocolate has melted.

1) Preheat oven at 175C.
2) Cream butter and sugar till light and creamy.
3) Add beaten eggs gradually and continue to beat till creamy.
4) Combine and mix well these ingredients in a separate bowl: mashed bananas, dairy cream, vanilla essence,     two tablespoons chocolate ganache and crushed oreo cookies. 
5) Combine cake flour, oat bran, baking powder.  Add into step 3, mix lightly and pour in combined ingredients from Step 4.  Mix well.
6) Fill each muffin cup 3/4 full and pipe a little chocolate ganache into the centre of each muffin with the remaining chocolate ganache.  
7) Arrange sliced bananas and Oreo cookies on top.
8) Bake at 175C for about 30 to 35 mins.
